Wessex Saddle Back Pork
We are restructuring our pork production methods. Unfortunately this means no pork for a while- sorry.
Wiltshire Lamb
Outstandingly good pasture finished lamb - even if we do say so ourselves ;-) The Wiltshire is only bred for meat, and as such it is one of the best eating sheep - period. Most sheep meat in Australia is from Merino crosses where the meat is of secondary importance to wool production. Enjoy the difference of a purpose bred animal and choose a dedicated meat breed - preferably a rare one.
1/2 lamb/hogget - not available again until late September 2011
whole lamb/hogget - " " " " "
Grass fed and finished, chem free and great flavour! Extremely limited numbers as we build up the flock and will be sold in halves and wholes. We have been receiving good feedback about the lamb, great flavour and tender - particularly so if slow cooked.
"Your lamb is sensational." Wade from a fat lamb production farm in Victoria.
Wiltshire Mutton - not available again until I decide on the culls, so next available mid 2012
Leg roasts 3kg each
Standing rack roasts 2kg each (8cutlets)
Loin roasts 2kg each (9 loin chops)
Rolled forequarter roasts 2kg each (boned out)
N.B. all weights are an approximate guide only
The above are all prepared as roasting pieces for that special occasion. The loin and rack have been bone cut so that once roasted individual chops or cutlets can be carved and served with bone on.
Mutton is harder to find these days and we only offer individual roasting pieces - this is the best way to experience it anyway. Our mutton is available on an ad hoc basis and in extremely limited quantities, so you will need to 'watch this space' and order quickly.
Please note that this is no ordinary 'mutton dressed up as lamb', but rare breed meat sheep that have been culled from the breeding herd, fattened on our best pasture, and then killed and dry aged for a minimum of 4 weeks. The taste and tenderness is incomparably good and a real treat - much better flavour than lamb.
OFFAL
Beef - heart, tongue, kidney, liver, cheek, ox-tail and cheeks.
Pork - heads, ears, tails, trotters, kidney and liver.
Lamb - heart, kidney and liver.
All priced at $10 per kg. Please send an email for availability. Our offal now sells very quickly, so please consider forward ordering or choice may be limited.
Very Fresh Free Ranged on Pasture Eggs.
Usually available year round, BUT to ensure you get some please consider a standing order - many of our market regulars have one, some for as many as 4 dozen eggs - I have no idea what an individual does with four dozen eggs every week!
Anyway, we are at the limit of production for eggs, we are a micro producer after all is said and done. We will be buying in some day old Australorp chicks, but they won't be laying until spring.
Raw and Local Honey
No honey is available at the moment as we await the trees to flower. Unfortunately due to the extended dry period, our trees have not flowered this autumn, so we have closed down the hives for wintering without an extraction. This means no honey from us until mid spring :-( That said all our gums are budding up: yellow box, red stringy bark, apple box, peppermint, manifera, snow, et cetera, so it should be an interesting spring with lots of honeys :-)
Price?
We believe that good and clean food should be available to all at a fair price; fair to us and fair to you. To remain in the business of producing unique and superior "good clean and fair food", we must also make a profit. That said, when thinking about price please know two things; firstly our prices contain all of the costs of production, so nothing is externalised - socially, environmentally, ethically or financially. Secondly; the nearest equivalent of our meats are selling for at least double, and up to four times the price in Sydney and Melbourne - if you can get it! And lastly, price should never be confused with value.
Payment? Orders are paid for by cash, cheque or (once we know you) electronic funds transfer after you receive the produce.
Please Consider........
We strongly recommended you consider forward ordering any of the meat packs to avoid disappointment. These 'real taste heritage meats' are always in demand, and as a micro producer we simply can't supply everyone. So to be fair we sell on a first come first served basis.
